Looking for a nourishing soup that’s both delicious and deeply restorative? This Golden Cordyceps Chicken Soup is a family favorite in our kitchen. It’s light yet packed with nutrients, making it especially supportive for recovery, energy, and overall wellness.

Cordyceps has long been used in traditional cooking for stamina and vitality — and paired with chicken, red dates, and goji berries, it creates a broth that’s naturally sweet, comforting, and healing.

 

Ingredients

  • 3g dried cordyceps
  • 1 chicken leg (or thigh)
  • 5 red dates
  • 10 goji berries
  • 3 slices fresh ginger
  • 1000 ml water

 

Instructions

  1. Rinse chicken and blanch briefly in hot water.
  2. Place chicken, cordyceps, dates, goji berries, and ginger in a pot with water.
  3. Simmer on medium-low for about 40 minutes.
  4. Season lightly with salt before serving.

 

Tips for Extra Nourishment

  • Add lotus seeds, yam, carrot, or corn for a naturally sweet, heartier broth.
  • For a vegetarian version, replace chicken with tofu and shiitake mushrooms.
  • Add cordyceps in the last 10–15 minutes of cooking to preserve nutrients.
