Recipe: Golden Cordyceps Chicken Soup (Nourishing Broth)

 

Ingredients

    • 3g dried cordyceps
    • 1 chicken leg (or thigh)
    • 5 red dates
    • 10 goji berries
    • 3 slices fresh ginger
    • 1000 ml water

Steps

    1. Rinse chicken and blanch briefly in hot water.
    2. Place chicken, cordyceps, dates, goji berries, and ginger in a pot with water.
    3. Simmer on medium-low for about 40 minutes.
    4. Season lightly with salt before serving.

Tips:

    • Add lotus seeds, yam, carrot, or corn for extra body and sweetness.
    • For a vegetarian version, replace chicken with tofu and shiitake mushrooms.
    • Add cordyceps in the last 10–15 minutes to preserve nutrients.
